PUMPKIN BABIES

SIFT FIRST 6 INGREDIENTS INTO BOWL.
1-1/2 CUPS ALL PURPOSE FLOUR
1 TSP. BAKING POWDER
1 TSP. BAKING SODA
1/4 TSP. SALT
1 TSP. ALL SPICE
1 TSP. CINNAMON
IN LARGE BOWL, BEAT EGGS, ADD SUGAR,
PUMPKIN AND OIL, BEAT UNTIL SMOOTH
2 EGGS
1 CUP SUGAR
1 CUP CANNED PUMPKIN (NOT PUMPKIN PIE MIX)
3/4 CUP CANOLA OIL
1/2 CUP CHOPPED NUTS (OPTIONAL)
STIR IN DRY INGREDIENTS AND ADD NUTS
IF USING THEM
GREASE PANS (MAY USE MINI MUFFIN PAPERS)
BAKE IN PREHEATED 350 OVEN
MINI MUFFINS - 10-15 MINUTES
LOAF PAN 50-55 MINUTES
REMOVE FROM OVEN - IF MAKING MINI MUFFINS,
REMOVE FROM PAN ASAP ONTO COOLING RACK
LOAF PAN COOL 5 MINUTES, LOOSEN, REMOVE FROM
PAN AND COOL ON RACK.
ONCE MUFFINS ARE TOTALLY COOLED, YOU CAN
SIFT CONFECTIONARY SUGAR OVER THEM.
IF MADE IN LOAF PAN - YOU CAN DRIZZLE
A CREAM CHEESE OR VANILLA GLAZE OVER LOAF
ONCE COOLED
THIS RECIPE MAY BE DOUBLED
