Ingredients:
1 Box Lemon Cake Mix
2 Eggs
1- 9 ounce container of Cool Whip (thawed)
Mix dry cake mix, 2 eggs, and the thawed cool whip well and drop by teaspoon into powdered sugar (confectioners sugar), roll into balls and place on greased cookie sheet (I use parchment paper to line cooking sheet and do not grease).
Bake at 300 until lightly browned (no time given however this will take 10-12 min. depending on the size of the ball you have made. Just check after 10 min. and cook until lightly browned and you will be good to go.
Variations: I have made these with the strawberry and orange cake mixes and they have turned out really great as well. These are a nice light cookie to have for summer and are very pretty for baby and wedding showers.
